1. What We’re Eating this Week…
Monday: NC seasoned ribs & green beans
Tuesday: slow cooker salsa verde chicken & broccoli
-4 chicken breasts
-1/2 bottle of salsa verde
-salt and pepper
-1/2 quart chicken stock
-white onion, diced
1. Place chicken breasts in crockpot along with taco seasoning, cumin, salt and pepper, onion, chicken stock, salsa verde. Totally eyeballed the spices.
2. Cook covered on low for 6 hours.
3. Remove chicken from slow cooker, shred, and place on foil-lined sheet pan
4. Broil for 4 minutes then spoon leftover juice from crockpot over chicken to remoisten.
5. Top with cilantro.
6. Eat plain or on a tortilla with your favorite taco toppings. I chose black beans, lettuce, cheese, and salsa.
This makes great leftovers for a meal prep type lunch for the week with salsa and veggies.
Wednesday: Parmigiano and Rosemary-crusted Rigatoni with Cauliflower and Prosciutto
Thursday: Filet with Blue cheese and Broccoli
Friday: take out!

Baby days! Since my baby is turning TWO this weekend.
3. What I’m Loving…
Caramel apple tea & pumpkin biscotti in the evening
Tea by Bigelow. Mmm.. loving this combination.
4. What We’ve Been Up To…
Still working on the mudroom. Finally found the perfect size shelf and got the hooks up! Materials have been purchased for our succulent window box and the hubs will work on this over the next week or so. Still looking for a great rug to complete the room.
We have also been continuing to remodel our stairs. We pulled the carpet out and refinished the wood underneath. It has been a long and annoying process and much more work than we anticipated. We have faced a lot of unexpected challenges with this project and we will both be so thankful when it is done. Good news: it is looking good!
5. What I’m Dreading…
Nothing? I guess flu season is always a busy time at work so maybe that?
6. What I’m Working On…
Violet’s Halloween costume.
Last year she was Dorothy and I just went for simple since I knew we would only make it to about 4 houses. I ordered her this cute skirt from Etsy and paired it with a simple white onesie, some glittery red shoes from Gap, a basket, and a red bow. She loved toting that basket around the yard more than anything else.
Her costume this year is pretty easy as well and made up of items we mostly had at home. Looking forward to seeing if she understands the concept a bit more this year or if the basket is still the most exciting thing about the evening.
7. What I’m Excited About…
My sister is pregnant with twins (boy & girl) and due at Christmas! Truly such a blessing for her and our family. I am hosting her shower in October and trying to work out all the details currently. But, I am excited for her to have this day to celebrate her pregnancy and these little babes.
8. What I’m Watching/Reading…
Watching: This is Us premiere this week!
So ready to get back in to this show and finally learn how Jack dies (even though I just love his character.) I love the character development and how the flashbacks really complete the story. These actors do a great job and this show totally deserves the recognition it receives. If you have not started watching This is Us, I highly recommend it. If you tune in, who is your favorite character?

9. What I’m Listening to…
The Ben & Ashley I. Almost Famous podcast
If you know me, you know my guilty pleasure is the Bachelor. Feel free to skip right over this if Bachelor is not your thing. However, if you are still angry Peter is not our next bachelor or actually look forward to Mondays …… then keep reading. Now I admit, Ashley I. was not my favorite on Bachelor or BIP. I think this is a pretty common feeling. However, she totally redeems herself in this podcast as well as her “I Don’t Get It” podcast. And how can you not love Ben Higgins?! Best bachelor so far. I love their discussions the day after the show airs covering all the ins and outs of the episode. They bring on guests to dish as well and you really get a lot of behind the scenes info. (Again, this may be super lame to some people but others will totally get it.) Ben & Ashley have the perfect chemistry to discuss all things Bachelor because Ben is SO PC and well, Ashley is not.
10. What I’m Wearing…
I am loving these boot socks from Old Navy. Totally not planning on wearing them with boots but love to pull them up and wear them around the house when lounging. The color is Georgia Pink but they also come in heather gray and black. They just feel good.
11. What I’m Doing this Weekend…
This weekend is Violet’s second birthday. I am really not sure how this is possible. It seems like just yesterday we were checking in to the hospital and holding our new little love in our arms. Or that I was just planning her first birthday party. POOF she is two.
I did the typical first birthday party thing last year so this year we are just having family over for brunch and gifts. EXCEPT that it is NOT just family because MY BEST FRIEND (and her family) IS COMING TO TOWN Y’ALL! Total last minute decision on her part and it has been the best news to come my way all week. Love how sweet she is to make the trip to visit and celebrate our girl. I would say long distance friendship is hard but, it really isn’t with her.
How cute are the kiddos at the beach this summer?! Violet will be so excited to see Holdy and Aunt Bobe.
12. What I’m Looking forward to Next Month…
So, in addition to our birthday brunch this weekend we are celebrating Violet’s birthday at the pumpkin patch the following weekend. Another fun family day picking pumpkins, drinking cider, and eating Southern food.

13. What Else is New…
The new illustrated Harry Potter and the Prisoner of Azkaban is released Oct 3rd. I already pre-ordered it on Amazon. Nerd alert!Check out my August book review and stay tuned for September’s.
